As the general manager of Paley’s Place Bistro & Bar, Kimberly Paley brings unmatched poise, sophistication and warmth to the “front of house,” ensuring a signature level of service that has been recognized by guests and media alike since the restaurant’s 1995 opening. Kimberly also oversees the restaurant’s carefully curated and acclaimed wine program, which perfectly complements Chef Vitaly’s seasonally-inspired American menu with its subtle Southern French and Northern Italian influences. With more than 20 years of industry experience – from New York to France to Portland – Kimberly still recalls the very moment she began her love affair with wine in the early 1980s: tasting a Bandol Rosé from Domaine Tempier – not just in France, but actually in Bandol where the wine originated – to her, a moment of perfection.
Kimberly studied with Master Sommelier Roger Dagorn at the French Culinary Institute, earning her wine captain’s diploma from the Sommelier Society of America. Under the guidance of celebrated professionals Andrea Immer and Kevin Zraly at the famed Windows on the World, Kimberly learned the ins and outs of the industry. In the early 1990s, she and Vitaly apprenticed in the Michelin two-star restaurant, Moulin de la Gorce near Limoges, France, and she later continued honing her skills in New York fine dining institutions Gotham, Bouley, and Alison on Dominick. With their sights set on the budding food and wine scene of Portland, Oregon, the Paleys relocated in late 1994 and soon realized their dream with the opening of Paley’s Place.
Now, through Imperial, Kimberly and Vitaly continue to discover the elements that define distinctive Northwest cuisine while pushing their personal culinary vision to new heights.
